Eight-foot high fencing is going to set you back a pretty penny. So you may also want to simply take a commonsense approach to planting: Pick plants that deer don't like. Your garden center should be able to give you tips for what will work for your area. Typically, a mix of strong smelling plants confuse deer. Coarse/tough hairy, with prickly leaves or plants with milky/sticky sap repulse them. Once you've established your camouflage, you can work in plants that deer do like.
