| "Great knife, but Anthony Bourdain said..." |

"What can I say? Ever since getting involved in cooking, Wustoff & Henckel are the "Mercedes" of knives. I wanted the straight edge Pro-S, but when I saw this model for $40, down from a retail of $120, I had to get it and I'm glad I did. This is a HEAVY knife! It's razor sharp and I can see using it for years and years. My one concern is with the multi-edge (which is great for certain items), if I can use a sharpener on it.
I will add that I bought the knife, right before I finished reading "Kitchen Confidential" by Anthony Bourdain (also bought at Amazon). In the book, he refers to the German knives as great knives, but cautions that they take a lot of care with oiled stones, etc... and he recommends Global brand knives. I'm more of a food hobbiest, and I haven't ran out and bought sharpening stones and oil, and if I had to pay full price (knowing what I know now) for the knife, I'd probably buy the Global. For the great $40.00 I paid for the knife here, and the craftsmanship and feel of this blade, you can't go wrong!"
