"amazing value"
Date:
5/16/2007
"I'm actually quite amazed at the quality of these "Pro Forged" knives from Farberware. I found the 8" version of the Chef knife on closeout in a discount store for $5, and got it just to have a beater knife to toss in the camping gear kitchen set. Now, I've got to admit that I'm something of a knife snob. My kitchen has a ridiculous number of knives including numerous examples from some of the finest German and Japanese manufacturers. I needed another chef knife like I need more clutter. But, this Chinese made cheap chef's knife sharpened up very well and seems to be made of a much higher quality steel than I've ever seen in a knife this cheap. The handle is big and squarish and it fits my large hands better than many of the pricier name-brand chef's knives in my collection. I'm very impressed."

"Surprisingly good knife"
Date:
2/8/2006
"This knife has all the right design elements; forged construction with full tang and a bolster between the handle and the blade, classic squarish handle with rivets and good quality high-carbon martensitic stainless blade. The blade balances whre the handle meets the bolster and I find it comfortable and easy to use. The build quality is reasonanly good but it does not inpsire the sort of talismanic pride of ownership and joy of handling of some of the more upmarket knives. The biggest issue to be aware of is that the blade is shipped with a very conservative edge. It might be even be accurate to say it arrives blunt. The blade will take a good edge but you do need to spend a good few minutes with the coarse side of the stone to grind in a better angle. If you like fiddling with knives this might even be a good thing. Once sharpened this knife keeps it's edge just great, with occasional use of a steel. Vegetable juices wipe right off but after preparing raw meat I like to sanitize this knife in the top rack of the dishwasher. It seems to handle it just fine, but I would not be surprised to see a little crazing of the handle after a year or two. For ten dollars I am very pleased with this knife."
