"My research shows...." Date: 8/17/2007
"I'm not a professional chef but I cook extravagant meals nearly every night. I've been cooking for about 12 years and was a bit hesitant at first to buy a set of pans that weren't non-stick. However, I did want to get away from teflon pans. As soon as I did I noticed a distinct difference in taste/quality. As EVERYONE says you don't need a lot of heat. I use an older natural gas stove and it was difficult for me to get it down low enough. Cuisinart suggests a flame/heat diffuser for those situations. After cooking for a while I did notice that using a pan on HIGH heat does cause a slight bit of discoloration on the bottom. I do however believe it will come out quite easily. As long as I have a small amount of oil in the pan I have had absolutely no issues with food sticking or burning and it's easier to use than any of my non-stick stuff and requires less heat/gas. Goes great with a nice set of Chicago Cutlery knives (awesome for the price) Other sets considered: Analon, Calphalon(strongly considered), Emerilware, All-Clad, Circulon"

"So in love with these pans!" Date: 8/6/2007
"If you are like me, with older hands, get these pans. I've cooked on cast iron all my life, now my old pans are out in the garage, for use on the grill. The other day, I cooked breakfast sausage in the ten inch skillet. I put the slices in cold, warmed them up on low, and then turned up the heat. They browned beautifully, and turned easily. The pan rinsed out with some hot water. If that had been my best cast iron skillet - the patties would have cooked just fine, but the clean up would have been a whole differant story! I use Barkeepers Friend ( how do they make that miracle stuff, and where has it been all my life?) and my pans shine like new every time. I've had this set for about six months now, and I just keep getting more and more relaxed with it. I've cooked fried chicken, tons of cabbage soup, mushrooms and onions, spagetti sauce, fried bratwurst, etc... Everything turns out so good, and then I just polish my beautiful pans till they shine! Thank you, Amazon, for the service you provide. Thank you, reviewers, for helping me decide which pans were right for me."
